tests: drivers: adc: Add MAX32 boards overlay files

Add board overlay files for the MAX32655EVKIT, MAX32655FTHR
MAX32662EVKIT, MAX32666EVKIT, MAX32666FTHR, MAX32672EVKIT
MAX32672FTHR and MAX32690EVKIT.
